What Is a Classic Negroni?
The Negroni is the quintessential “equal parts” cocktail. A classic Negroni is composed of equal parts gin, Campari, and sweet vermouth, garnished with an orange twist and served on the rocks.
Origins of the Negroni Cocktail
Legend has it that in the early 1900s, at a cafe in Florence, Italy, a Count Camillo Negroni asked the bartender, Fosco Scarselli, for a boozed-up riff on an Americano—an even more easygoing concoction of Campari, sweet vermouth, and soda water. Scarselli subbed the soda water for gin, swapped the Americano’s customary lemon peel for an orange peel to differentiate the two, and the Negroni cocktail was born.
How to Make Lynnette Marrero’s Toffee Negroni
The Negroni is typically thought of as a gin cocktail, but the format takes well to modifications. Lynnette Marrero’s Toffee Negroni is a meaty, nutty Negroni variation. Rum replaces the traditional gin, Amontillado Sherry fills in for sweet vermouth, and Aperol takes the place of Campari. It’s all topped off with a grapefruit peel twist.

While almost any traditional aged rum works well in this recipe, other sherries won’t marry as well with the other ingredients. If Amontillado Sherry proves to be difficult to source, an Oloroso or Palo Cortado Sherry will work just as well in its place.

Combine rum, Aperol, and sherry in a mixing glass.

Stir with plenty of ice, and strain into a rocks glass filled with ice cubes.
