- 1. Add other vegetables to the taco filling. If using only black beans in the taco filling sounds like too many beans, break up the filling with cubed sweet potato, onions, carrots, or squash.
- 2. Mash some of the beans. Ground beef and other taco fillings have a mixture of textures. To mimic that with black beans, mash or chop some black beans and leave others whole.
- 3. Use the same taco seasoning as traditional tacos. Use store-bought taco seasoning or make homemade taco seasoning with chili powder, cumin, cayenne pepper, oregano, paprika, garlic powder, kosher salt, and pepper.

In a small bowl, combine the cumin, chili powder, smoked paprika, garlic powder, oregano, black pepper, cayenne pepper, and salt.

Drain the cans of black beans and set the beans aside.

In a large skillet on the stovetop over medium heat, add the olive oil.

Add the diced red onion and sauté it for 5 minutes.

Add the black beans to the skillet, along with ¼ cup of water and 3–4 tablespoons of taco seasoning. Add more seasoning if desired.
