What Is Zucchini Soup?
Zucchini soup is a thick and hearty soup made by simmering zucchini, potatoes, and aromatics in vegetable broth, then pureeing before serving. You can experiment with different spices and seasonings in your squash soup or serve it simply with a dollop of sour cream and a sprinkling of fresh herbs. As far as health benefits go, fresh zucchini are high in dietary fiber and potassium—useful in maintaining good blood pressure—and help achieve the recommended daily value of vitamin C and B6.
4 Tips for Making Zucchini Soup
Follow these tips to make the best zucchini soup:
- 1. Use medium zucchini. Large zucchini have higher water content than smaller zucchini, which can dilute the flavor. Use medium-sized zucchini for a more concentrated squash flavor.
- 2. Let it simmer. While soup recipes vary depending on the ingredients, there’s one principle that almost always applies: take your time when simmering the ingredients together. Keeping your soup base on a low, steady heat coaxes vegetables, herbs, and aromatics to release their flavors into the dish and create a cohesive, complex flavor.
- 3. Experiment with different kitchen tools. You can make soup using almost any kitchen tool—whether that’s a heavy pot, a slow cooker or crockpot, a pressure cooker, or even a powerful blender. Experiment with different tools and see which ones work best for your favorite soup recipes.
- 4. Incorporate various toppings. While soup can be satisfying on its own, many soup recipes call for toppings or sides—from cornbread to dumplings—to add additional flavors or create a more filling meal. Creamy zucchini soup is gluten-free and low-carb, but you can top the vegetable soup with grated Parmesan cheese and toasted croutons or serve it with Italian bread for dipping.
