- 1. Strain the zucchini. Remove as much water as possible from the zucchini so your fritters can properly pan-fry. Otherwise, the excess water will cause the zucchinis to steam rather than brown and crisp up in the hot oil, yielding soggy fritters.
- 2. Check the temperature of the oil. The ideal temperature for oil to fry food is 350 degrees Fahrenheit. Keeping the oil at a consistent temperature will allow the fritters to cook through and turn golden brown without burning. If the oil is under temperature, the fritters won’t crisp up. If the oil is too hot, the patties may burn before their insides have fully cooked. Use an instant-read thermometer to check the temperature of the oil.
- 3. Freeze for later. Freeze your zucchini fritters for a quick and easy reheatable snack. Using the grater attachment of a food processor or the large holes of a box grater, grate the zucchinis.

Transfer the grated zucchini to a colander covered with cheesecloth (or a few layers of paper towels).

Wrap the shredded zucchini in the cheesecloth and squeeze it until you’ve released nearly all of the water.

In a large bowl, combine the eggs, flour, baking powder, garlic powder, red pepper flakes, salt, and black pepper.

Add in the zucchini, green onions, parsley, feta, and Parmesan, and stir to combine.

In a large cast-iron skillet or nonstick pan over medium-high heat, warm 2 tablespoons of the olive oil until it shimmers.
