What Is Yogurt Cake?
Yogurt cake is a simple pound cake made with plain yogurt. The acidic yogurt reacts with baking soda or baking powder, which allows the cake to rise. Yogurt also adds moisture and a subtle tangy flavor to the cake. Some bakers boost the tanginess with lemon zest and/or fresh lemon juice or fold in fresh fruit, such as blackberries. Many countries have their take on yogurt cake, but one of the best known is the French gâteau au yaourt.

Preheat the oven to 350 degrees Fahrenheit.

Grease an 8½-inch loaf pan or 8-inch cake pan with butter or nonstick spray.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, whisk together the sugar, yogurt, eggs, and vanilla until well combined.

Add the dry ingredients to the wet ingredients and stir to incorporate.

Using a rubber spatula, fold in the oil.

Scrape the batter into the prepared pan and smooth the top with the rubber spatula.

Bake the cake until a cake tester or toothpick inserted into the center of the cake comes out clean, about 40 minutes for a round cake or 50 minutes for a loaf cake.

Place the pan on the wire rack and let the cake cool in the pan for 10 minutes, then transfer the cake to the wire rack to cool to room temperature.
