Place the whole milk ricotta cheese and salt (and the sugar if you’re making sweet whipped ricotta) in a mixing bowl. Beat the ricotta cheese (and any add-ins, such as fresh herbs) for about 2 minutes, until the cheese is light and airy. If you’re using a food processor, let the machine run for 1–2 minutes.
