What Is Black Salt?

Black salt is a type of rock salt found in the Himalayan mountains. It is also known as kala namak, Indian black salt, and Sulemani namak. Despite its name, Himilayan black salt is brownish-pink in color. Black salt is a popular ingredient in South Asian cuisines. It has historically been used in Ayurvedic medicine, a traditional medical practice in India.

Black salt contains sodium chloride—the key chemical element of salt—and traces of sulfates, iron sulfide, magnesium, potassium, and other elements found in the rocks of the Himalayan mountains. Black salt has a lower sodium content than regular table salt. The sulfur gives the salt an umami flavor and the scent of boiled eggs, which makes it a popular ingredient in vegan eggs.

3 Types of Black Salt

Black salt commonly refers to Himalayan black salt, but there are other types of black salt with different properties:

  1. 1. Himalayan black salt: This pinkish-brown salt is a popular finishing salt and ingredient for savory dishes.
  2. 2. Black lava salt: Black lava salt, also known as Hawaiian black salt, is a combination of table salt and activated charcoal, which gives it a black color. This salt comes from Hawaii and Cyprus. It has a smokey flavor. Use black lava salt as a finishing salt for savory dishes.
  3. 3. Black ritual salt: This salt, which is not meant for consumption, is a mix of charcoal, ash, and dyed sea salt. It is used in rituals and is also known as witches' salt.

How Is Black Salt Made?

Black salt is naturally found in salt mines of Pakistan, Bangladesh, India, and Nepal. Salt manufacturers heat the salt in kilns with herbs, seeds, and charcoal, producing a chemical reaction that brings out the dark color. Black salt may also be made synthetically.

You can use black salt to enhance the flavors of savory dishes in a variety of cuisines.

  1. 1. In a spice blend: Chaat masala, an Indian seasoning, uses black salt as a key ingredient to give it its complex flavor.
  2. 2. In vegan eggs: To emulate the flavor of eggs, you can use black salt in any dishes that call for vegan eggs, such as a tofu scramble or vegan egg salad. The sulfur in black salt allows it to evoke the umami flavor of eggs.

Both pink Himalayan salt and black Himilayan salt are types of rock salt, but they have a few key differences:

  • Color: Both types of salt are naturally occurring rock salts in the Himalayas. Pink salt can range from pink to orange in color. Black salt can be pinkish-brown to black.
  • Flavor: In terms of flavor, black salt is smokey and sulfurous, while pink salt is more mild.
  • Minerals: Black salt contains traces of sulfates, iron sulfide, magnesium, potassium, and other elements found in the rocks of the Himalayan mountains. Minerals in pink salt include calcium, magnesium, and potassium.
