What Is Vegan Artichoke Dip?
Vegan spinach artichoke dip is a non-dairy replacement for the traditional spinach artichoke dip and well suited for a potluck or other large gathering. Whether you or your guests are vegan or simply cutting back on dairy, this vegan appetizer is a great way to enjoy a party staple with a few simple ingredient swaps.
Most vegan recipes that recreate dairy-based dishes often utilize nutritional yeast or cashews. Nutritional yeast is high in protein, vitamin A, and vitamin C, and includes minerals, such as potassium and calcium; it’s also usually gluten-free. Its nutty flavor is cheesy. Cashews, when blended, create a rich creaminess that is great for dips and vegan cheese recipes. When combined with the right ingredients, it tastes similar to cheese.
Many artichoke dip appetizers also call for sour cream and cream cheese. For a vegan version, you can soak cashews in hot water before blending them. The longer you can soak them the easier this will be, so consider soaking them overnight. You can also reheat the vegan version in the microwave or oven.

Preheat the oven to 425 degrees Fahrenheit.

Soak the cashews. Heat 3 cups of water to boiling, either in a tea kettle or in a pot on the stove. Put the raw cashews in a large bowl, and carefully pour the hot water into the bowl over top. Soak for 5 minutes.

In a small pan, sauté the garlic and onion in olive oil for 2–3 minutes, or until the onion is slightly translucent. Then set aside.

Drain the cashews, and using a high-powered blender, add the drained cashews, unsweetened non-dairy milk, nutritional yeast, lemon juice, and salt. Blend in a food processor until very smooth.

Keeping everything in the blender, add the sautéed garlic and onions, spinach, and artichokes. Pulse the blender a few times to mix, but do not blend.

Pour the mixture into an oven-safe baking dish and bake in the oven for 20 minutes, or until warm, bubbly, and golden brown on top. When ready, remove from the oven, sprinkle vegan parmesan cheese on top, and serve.
