Vegan apple cider donuts are a fall-friendly version of the classic fried treat prepared without animal byproducts. Like traditional donuts, vegan donuts typically include flour, sugar, and salt. Instead of eggs, milk, and butter, this vegan donut recipe calls for dairy-free alternatives like plant-based milk, vegan butter, coconut oil, and egg replacements like hydrated flaxseed meal. Unfiltered, tangy apple cider gives these cakey fried treats their spicy, unmistakable fall flavor.

- 1. Use bread flour. Bread flour has more protein than all-purpose flour, which means more gluten. Optimizing gluten production while fermenting the donut dough results in a chewier, more toothsome treat.
- 2. Deep-fry in batches. It may be tempting to save time by frying as many donuts as possible in the hot oil. However, overcrowding the fryer will lower the overall temperature and result in soggy, oil-soaked donuts that fail to crisp up properly. Fry two or three donuts at a time, depending on your fryer size. As you fry the treats, monitor the temperature consistently, which should hover around 350–360 degrees Fahrenheit.
- 3. Try baking the donuts. Bake the apple cider donuts in a donut pan for a healthier alternative to the deep-frying method. Swap the yeast for leavening agents like baking powder or baking soda if you opt to bake your donuts.
- 4. Make gluten-free vegan donuts. As with any non-vegan donut recipe, it’s possible to use gluten-free flour to make a celiac-friendly vegan dessert. Almond flour and oat flour don’t provide enough structure to the dough (which can yield a denser donut) so stick with an all-purpose gluten-free flour blend instead.

Make the donuts:

In a medium bowl, combine the flaxseed meal and water. Set the mixture aside to thicken for at least 5 minutes, allowing the vegan “egg” alternative to form.

Add the melted coconut oil and vanilla extract to the flax egg and whisk to incorporate.

In a small saucepan over low heat, warm the almond milk. When steam appears on the surface of the milk, transfer it to a small bowl.

Add the yeast to the milk and let it stand until it is foamy, at least 5 minutes.

Add the apple cider to the yeast mixture and stir to incorporate.

In a large mixing bowl, whisk together the flour, salt, granulated sugar, cinnamon, cardamom, and nutmeg.

Add the yeast mixture to the dry ingredients, followed by the flaxseed meal mixture. Using a wooden spoon, stir together the dry and wet ingredients until a thick, shaggy dough forms.

Transfer the dough to the bowl of a stand mixer fitted with a dough hook attachment. Using the mixer, knead the dough until it is elastic and glossy and clings to the hook, about 7–8 minutes. Alternatively, knead the dough by hand on a lightly floured surface.

Place the dough in a lightly greased large bowl and cover it with plastic wrap. Let it rise in a warm spot on the counter or place it in the refrigerator until it doubles in size, about 1 hour.

In a Dutch oven over medium-high heat, warm the oil.

Turn the dough out onto the floured surface and roll it out into a ½–1-inch-thick sheet. Using either a cookie-cutter, donut cutter, or paring knife, punch out rings or rounds from the dough.

Carefully add the donuts to the hot oil (no more than 2 at a time) and fry until they are golden brown, about 3–4 minutes per side.

Using a slotted spoon, remove the donuts and transfer them to a cooling rack or a baking sheet lined with paper towels. Repeat this process with the remaining donuts.
Prepare the glaze and assemble the donuts:

In a medium bowl, whisk together powdered sugar, almond milk, apple cider, cinnamon, and salt until completely smooth. If the glaze is too thick, thin it out with a few splashes of almond milk.
