What Is Turkey Stew?

Turkey stew is a dish of turkey meat cooked with vegetables and aromatics in broth or water. Stewing is a great way to cook dark-meat turkey, but if you only eat turkey once a year, try combining leftover Thanksgiving turkey meat with chicken stock and veggies. In Mexico, turkey is often stewed in mole, a flavorful sauce of chocolate, chiles, nuts, and spices. You can also swap chicken for turkey in comfort-food classics like chicken and dumpling stew.

Ingredients

    In a large dutch oven over medium-high heat, heat oil until barely shimmering.

    Add the onion and season with salt and pepper.

    Sauté the onion until translucent, about 8 minutes.

    Add the celery, carrots, and garlic, and sauté until the vegetables are tender, about 5 minutes.

    Add the chicken broth, bay leaves, and thyme and bring to a simmer.

    Add the potatoes and simmer until tender, about 20 minutes.

    Add the green beans, turkey meat, and parsley, and simmer until beans are just tender and turkey meat is warm through, about 5 more minutes.

    Taste and adjust the seasoning with salt and pepper.
