What Is a Sushi Burrito?
A sushi burrito is an Asian-inspired fusion food featuring traditional sushi ingredients—like sushi rice, raw fish, and julienned vegetables—rolled up into a nori-wrapped “burrito.” Also known as a “sushirrito,” diners can hold this fusion wrap similarly to the stuffed Mexican tortilla dish. Customize this playful combination of two popular dishes with the proteins, grains, veggies, and condiments of your choice.

Follow these tips to make perfect sushi burritos every time:
- 1. Change up the protein. Traditional sushi proteins include thinly sliced seafood like ahi tuna, salmon, yellowtail, squid, shrimp, and imitation crabmeat. Mix and match animal-based and plant-based proteins to suit your preferences. Opt for lox, smoked salmon, or shrimp tempura for a cooked filling. Incorporate a vegan protein option like seasoned tofu, seitan, and shitake mushrooms for a plant-based dish.
- 2. Experiment with fillings. Customize your sushi burritos with different grains, vegetables, herbs, seasonings, and condiments. Swap the sushi rice for brown rice or quinoa. Incorporate pickled ingredients like kimchi, pickled cucumbers, and pickled ginger. Add thinly sliced peppers, radishes, cabbage, and fresh herbs. Drizzle on mayo or your favorite hot sauce for added flavor and moisture.
- 3. Follow make-ahead instructions. Once assembled, sushi burritos will keep well for up to a few hours in the refrigerator. Beyond that, the nori seaweed sheets will become soggy. To prep the burritos ahead of time, cook the sushi rice up to two days in advance and store it in an airtight container in the refrigerator. Slice the vegetables and fish in advance for easy day-of burrito assembly. Store any leftover fillings separately and assemble the burritos when you’re ready to serve them.

On a cutting board covered with a sushi mat or parchment paper, line up 2 seaweed sheets side by side. Using a pastry brush or your finger, brush the edge of one of the nori sheets with water.

Press the dry nori sheet onto the wet portion of the other one to bind them together.

Add a ¾ cup-portion of the cooked rice to the nori sheet and spread it out into an even layer to the edges, leaving about 1 inch of space at one end of the sheet.

In the center of the rice, layer a ¼ of the carrots, cucumbers, avocado, sliced fish, crab sticks, kimchi, and scallions.

Drizzle the spicy mayo and hot sauce of your choice over the fillings, followed by a sprinkle of sesame seeds.

Gently lift the side of the nori opposite to the 1-inch border and carefully fold it over the fillings, using your fingers to roll it away from yourself as you would while making a burrito.

When you reach the end of the nori, brush a thin layer of water onto the naked edge and fold it over the burrito, pressing it into the seaweed to secure it in place. Repeat this process with the remaining nori sheets and burrito fillings.

Place the assembled burritos on a cutting board, seam-side down. Using a sharp knife, cut each burrito in half through the center. Serve immediately with wasabi and soy sauce for dipping.
