What Is Strawberry Syrup?
Strawberry syrup is a sweet mixture of strawberry juices, water, and sugar. Other elements can be added to give it more flavor or thicken it. Strawberries themselves are low in carbohydrates and excellent sources of vitamin C and potassium—so while strawberry syrup still contains a hefty helping of sugar, it can be healthier than alternative types with artificial preservatives like high-fructose corn syrup.

A store-bought strawberry syrup or DIY simple recipe is a delicious addition to food and drinks of all varieties. Some ways you can use strawberry syrup include:
- 1. Breakfast: There’s a reason popular brunch spots include this satisfying option alongside the maple syrup on their tables. It’s a flawless buttermilk pancake syrup, an ideal addition to French toast, and a consummate accompaniment to crepes and waffles. Pour both strawberry and blueberry syrup over your breakfast or add it into pancake batter to make strawberry pancakes.
- 2. Dessert: You can pour a fresh strawberry syrup over your favorite dessert. Cheesecake, vanilla ice cream, strawberry shortcake—all of these and even more desserts can be delicious when paired with strawberry syrup.

Simple Homemade Strawberry Syrup Recipe

Allow your frozen strawberries to thaw before slicing them, or slice them immediately if you’re using fresh berries. Alternatively, you can use a food processor to mash them into a strawberry purée.

Pour the sugar and ½ cup of water into a medium saucepan over medium-high heat and let it simmer for about 2 minutes.

After this simple syrup has simmered for at least 2 minutes, add the sliced strawberries and turn the heat down to low for 5 minutes.

While the strawberry sauce is on the stove, whisk together the other ½ cup of water and the cornstarch. Then add this mix to the simple syrup to thicken the syrup and stir. At this point, you can also add the vanilla extract and lemon or lime juice to add more zest and flavor, if you choose.

Remove the pan from the heat and let the syrup cool at room temperature for 10 minutes and stir it occasionally.

Place a mesh strainer over an airtight container. Gradually pour the contents of the syrup through the strainer and into the container.

Discard the remnants of strawberries in the mesh sieve.

Refrigerate or freeze the syrup in its airtight storage container.
