The word "galette” comes from the Norman word “gale,” meaning “flat cake.” Galettes are popular both for their ease of creation and their versatility.
Traditional galette fillings consist of fruit, butter, and sugar, but many chefs prepare the dessert with rich, savory fillings.

Making a tasty strawberry rhubarb galette is similar to making other galettes, like plum, cherry, and pear. Follow these tips to make the best galette possible:
- 1. Using fresh vs. frozen fruit: Fresh, in-season fruit is the best option for making a galette. However, you can substitute an equal amount of frozen strawberries and rhubarb if fresh options are not in season. Additionally, there is no need to thaw the frozen fruit before baking it in your galette.
- 2. Adjusting the sugar content: Adjust the sugar in your galette’s strawberry rhubarb filling to suit your palate. Use sugar alternatives, like honey, pure maple syrup, or agave nectar, or try stevia for sugar-free sweetness.
- 3. Season the filling: Add different herbs and spices to your galette filling to create a unique flavor profile. Incorporate herbs like thyme, lavender, or rosemary for an aromatic quality. For the crust:
- 1 cup unbleached all-purpose flour
- ½ teaspoon sugar
- ⅛ teaspoon salt
- ½ cup unsalted butter, cold, cut into ½ -inch pieces
- ½ tablespoon apple cider vinegar
- 1½ tablespoons ice water
- 1 large egg yolk
- Turbinado sugar
For the filling:
- 3 cups fresh rhubarb, cut into ½-inch pieces
- 3 cups fresh strawberries, cut into quarters
- ¼ cup granulated sugar
- ¼ cup light brown sugar
- 1 teaspoon vanilla extract
- 2 tablespoons lemon juice
- 3 tablespoons cornstarch
For serving:
- Vanilla ice cream, for serving (optional)
Note: The total time does not include 2 hours and 10 minutes of inactive time.

Make the crust. In a large bowl, whisk together the flour, sugar, and salt.

Add the cold butter to the flour mixture and work it between your fingers until the dough resembles the texture of coarse breadcrumbs.

Turn the coarse dough out onto a lightly floured surface. Drizzle the apple cider vinegar and ice water over the dough.

Form the dough into a 1-inch thick disk and wrap it tightly in plastic wrap. Place the dough in the refrigerator to chill for a minimum of 2 hours.

As your dough chills, make the fruit filling. In a large bowl, combine the sliced rhubarb, strawberries, granulated sugar, brown sugar, vanilla extract, lemon juice, and cornstarch. Cover the bowl with plastic wrap and place it in the refrigerator.

Once the dough is done chilling, prepare to bake your galette. Preheat the oven to 385 degrees Fahrenheit. Line a baking sheet with parchment paper. Remove the dough and fruit filling from the refrigerator.

As your oven is preheating, form your galette crust. Place the dough on a lightly floured work surface. Using a rolling pin, roll the dough out into a 10-inch circle.

Gently transfer the galette dough to the parchment-lined baking sheet.

Spoon the strawberry rhubarb filling into the center of the dough, leaving a 2-inch border of dough around the galette’s edges.

Fold the edges of the galette dough up and over itself to form a wreath-like ring around the fruit filling. Crimp together the dough edges to seal the crust.

In a small bowl or measuring cup, whisk together the egg yolk and 1 tablespoon of cold water to make an egg wash.
