What Are Sourdough Crackers?

Sourdough crackers are small bite-size snacks made from unfed sourdough starter, also known as sourdough starter discard. When feeding a starter, most instructions call for removing a small portion and discarding it. However, there are many ways to use sourdough discard—including making savory crackers. Serve sourdough discard crackers with dips like hummus or alongside meat and cheese on a charcuterie board.

5 Seasoning Ideas for Sourdough Crackers

You can use various seasonings to flavor your homemade crackers, such as:

  1. 1. Everything bagel seasoning: A mixture of sesame seeds, dehydrated garlic, dehydrated onion, poppy seeds, and salt, everything bagel seasoning replicates the flavors of the signature bagel. Sprinkle the seasoning on top of the dough before baking your crackers. Add a touch of garlic powder for extra flavor.
  2. 2. Fresh herbs: Chop up fresh rosemary, thyme, basil, chives, or other tender herbs to flavor your crackers.
  3. 3. Italian seasoning: A blend of dried herbs such as rosemary, oregano, thyme, basil, fennel seed, and parsley gives your sourdough discard crackers a complex flavor. Grate Parmesan cheese on the crackers before baking for an extra crispy texture.
  4. 4. Spices: Cumin, paprika, and chili powder give the crackers a smoky, slightly spicy flavor. Pair these spiced sourdough crackers with hummus or creamy tzatziki.
  5. 5. Za’atar seasoning: This spice blend contains sesame seeds, dried sumac, salt, marjoram, and other herbs. Knead the za’atar into the cracker dough to evenly distribute it among the dough.
