A s’mores brownie is a hybrid dessert that consists of a traditional chocolate brownie, a graham cracker crust, and toasted marshmallows. Whether you enjoy the soft, gooey center or have an affinity for the crisp, bronzed edges, each bite will offer something new and exciting.

A broiler is a great option for achieving the classic toasted-marshmallow look, but it’s by no means necessary to broil the brownies after baking. The result may not look as toasty and golden brown, but they’ll taste just as great. Here’s what else to know:

  1. 1. Choose the right marshmallow. Mini, regular, and fluff are all great options, but you may need to adjust your technique to the type of marshmallow you choose. Working with fluff is the simplest option, but choose mini or regular marshmallows if you want that familiar chewy marshmallow texture.
  2. 2. Use room-temperature eggs. Let your eggs come to room temperature before incorporating them into the batter. If all the ingredients are at the same temperature, they’ll blend more evenly.
  3. 3. Take a shortcut. Use boxed brownie mix (plus oil and eggs) instead of making the brownie batter from scratch to save time.
  4. 4. Let the layers cool. After baking, give the brownies a few minutes to cool in the tray before slicing into them. If you cut them straight from the oven, your brownies will undoubtedly be delicious, but they won’t be nearly as picturesque. Submerge a sharp knife into hot water and dry it with a kitchen towel between each slice to ensure clean cuts.

Make the graham cracker crust:

    Preheat the oven to 375 degrees Fahrenheit.

    Cut parchment paper to fit into an 8-inch square baking pan. Spray the pan with nonstick cooking spray.

    Combine the graham cracker crumbs, salt, and melted butter in a small bowl and mix until homogeneous.

    Spread the graham cracker crumb mixture evenly over the bottom of the prepared pan.

    Press down with the palm of your hand or the bottom of a measuring cup to compress the mixture.

Make the brownie batter:

    In a large bowl, stir together the eggs, melted chocolate, vanilla, and butter.

    Add the sugars and stir until well blended.

    Add the cocoa, salt, flour, and baking powder and stir until just combined.

Make the marshmallow topping and assemble:

    Once the brownies have fully cooled, spread the marshmallow fluff mixture evenly over the top.

    Dot the top of the fluff with mini marshmallows.

    Turn on the broiler and broil the brownies until the marshmallows are golden brown, 2–3 minutes.
