    Bring a large pot of salted water to a boil, and add the macaroni noodles.

    Cook the noodles according to the package directions, until they are barely al dente. Drain the noodles and set them aside.

    Meanwhile, in a large cast-iron skillet over medium heat, melt the butter.

    Add the flour to the melted butter and whisk continuously to form a smooth, light-brown roux, about 2 minutes.

    Slowly drizzle the milk and half-and-half into the pan, whisking continuously to incorporate the dairy.

    Whisking frequently, bring the liquid to a boil and cook until it starts to thicken, 4–5 minutes.
