Smoked eggs are a side dish or snack made by cooking raw eggs over low indirect heat in a smoker or grill until they reach a hard-boiled texture. This cooking process infuses your eggs with a delicately smoky flavor. The eggs take on a unique appearance in the smoking process, with the egg whites turning golden yellow or brown as they cook.
Smoked eggs make a delicious snack on their own, or they perfectly complement barbecue-inspired dishes like deviled eggs, grain bowls, or a smoky egg salad sandwich.
4 Tips for Making Smoked Eggs
Follow these simple tips to make a perfect batch of smoked eggs :
- 1. Choose the right wood chips. The type of wood chips you’re using in your smoker or grill will significantly influence the flavor of your smoked eggs. For a classic barbecue flavor, use hickory or oak chips. Maple, cherry, and alder wood will produce a milder flavor. Mesquite chips will yield a bold flavor.
- 2. Grill at a consistent temperature. It’s imperative to keep the temperature consistent throughout the smoking process for your eggs: Any fluctuations in temperature could result in the eggshells cracking.
- 3. Use a muffin tin. Some chefs prefer smoking the eggs in a vessel rather than directly on the grill grate. To do this, place the eggs in the wells of a muffin tin, then put them in the smoker.
- 4. Experiment with different seasonings. Smoked hard-boiled eggs are a satisfying snack on their own, but a pinch of seasoning adds more flavor. Top your smoked eggs with some salt, pepper, paprika, or BBQ rub. Smoked eggs are also perfect for making egg-based dishes like smoked egg salad, smoked deviled eggs with a garnish of pickled jalapeño and chives, and barbecue-inspired Cobb salads.

Preheat a smoker or pellet grill to 250 degrees Fahrenheit.

Place the eggs directly on the grates of the grill. You can also put them in a grill-safe muffin tin and place the tin inside of your smoker.

Close the grill lid and cook the eggs for 90 minutes.

Remove the cooked eggs from the grill and transfer them to an ice bath to chill for 5 minutes.

Remove the eggs from the ice water, peel, and serve warm with a sprinkling of salt and pepper. Store the leftover eggs in an airtight container for up to a week.
