What Are Smoked Beans?

Smoked beans (or barbecue beans or BBQ beans) are similar in taste to baked beans but typically cook in a smoker instead of an oven. Smoked beans usually have a more pronounced smokiness to their flavor as a result of cooking over mesquite or hickory wood chips. If you prepare smoked beans using a stovetop, a gas grill, or an oven, you can still achieve a smoky flavor by adding liquid smoke or a smoked pork product.

Whether a smoked baked beans recipe calls for dried beans or canned beans, using one or more of these three types of beans will yield flavorful results:

  2. 2. Ground beef: To bulk up a smoked baked beans recipe, add ground beef. Serve a meaty baked beans mixture as a side dish or a main dish, similar to a chili.
  3. 3. Ham hock: Cook your baked beans with a ham hock to impart the flavor of pork. At the end of the cooking process, shred the meat off of the bone and stir it back into the pot of beans. Ham hocks are salty, so taste the beans throughout the cooking process to determine whether additional salt is even necessary.

    Preheat a Dutch oven or a cast-iron skillet over medium heat on the stovetop and preheat the oven to 350 degrees Fahrenheit.

    Cook the bacon until it’s crispy, then set the bacon aside but leave the bacon grease in the pan.

    Sauté the diced yellow onion in the bacon grease until it starts to turn brown, which takes about 5 minutes.

    Next, add the ketchup, brown sugar (or molasses), Worcestershire sauce, liquid smoke, apple cider vinegar, smoked paprika, water, salt, and black pepper. Stir to combine all the ingredients. Let the mixture simmer for 20 minutes but stir it regularly.

    While the barbecue sauce simmers, chop the bacon into pieces similar in size to the beans.

    After 20 minutes, add the chopped bacon and the cans of beans, including the liquid from each can of beans. Stir to combine the beans and bacon with the BBQ sauce.

    Transfer the bean mixture from a cast-iron skillet to an aluminum pan and cover the pan with aluminum foil—or leave the beans in an oven-safe Dutch oven with the lid on. Bake the beans in the oven for 10 minutes covered, then another 10 minutes uncovered until the top of the beans is matte in color and bubbly.
