When you smoke baked potatoes, they take on a deep, smoky flavor. Use your smoker of choice and russet potatoes, which work the best because of their high starch content. Here are additional tips for making smoked baked potatoes:
- 1. Make smoked baked potatoes in batches. You can use this versatile dish in myriad ways. Serve smoked baked potatoes as a baked potato side dish for pulled pork and other BBQ meats, or use them to make mashed potatoes (mix in cream cheese for a tangy, smoky flavor). Preheat a pellet smoker to 225 degrees Fahrenheit.

Add hickory, mesquite, or other flavored wood chips to the smoker according to the manufacturer’s instructions.

Prick the potato skins with a fork.

Brush each potato with olive oil.

Season each potato with salt, pepper, garlic powder, and paprika.

Place the potatoes directly on the pellet grill grates. Wrapping the potatoes in aluminum foil is optional.

Smoke the potatoes until the internal temperature reaches 205–210 degrees Fahrenheit—about 2 hours.
