What Is Shrimp Tortellini?

Shrimp tortellini is a dish that features cheese-filled tortellini tossed with sautéed or boiled shrimp in a creamy alfredo sauce. This Italian-American pasta sauce typically includes Parmesan cheese, heavy cream, and butter. You can make fresh tortellini pasta or use premade tortellini for a filling and easy weeknight dinner.

3 Tips for Making Shrimp Tortellini

Follow these simple tips to make the best shrimp tortellini:

  1. 1. Add vegetables. For some added flavor and nutritional value, add some vegetables to the pasta dish. Sauté zucchini or broccoli to add textural variety. For ease, stir in spinach, peas, or sun-dried tomatoes at the end of the cooking process.
  2. 2. Boil everything together. Skip extra cooking steps by cooking the shrimp in the same water as the tortellini. About 3 minutes before the tortellini finishes cooking, add the shrimp. The shrimp will finish cooking in the warm sauce.
  3. 3. Try different sauces. You can use whatever pasta sauce you like. Basil pesto, marinara, vodka sauce, or a simple butter sauce pair well with shrimp tortellini pasta recipes. Or add a little Cajun spice to alfredo sauce for a spicy kick.

    Bring a large pot of salted water to a boil.

    In a large skillet over medium-high heat, combine butter, heavy whipping cream, and Parmesan cheese. Reduce to low heat and simmer, occasionally stirring, until the sauce has thickened and reduced by about half, about 10 minutes.

    Meanwhile, cook the tortellini in boiling salted water until barely al dente according to package directions, stirring to prevent sticking. You will know they are ready when all of the tortellini have popped up to the surface, about 5 minutes for fresh or 9 minutes for frozen (cut into one tortellini to ensure the filling cooks through and the pasta is al dente). In the last 3 minutes of cooking, add the shrimp and peas.

    Drain the pasta, shrimp, and peas, reserving ¼ cup of the pasta water.

    Add the drained tortellini, shrimp, peas, and minced garlic to the pan with the sauce, and set over medium-low heat. Stir in reserved pasta water, and cook until shrimp is done and the sauce slightly thickens, about 3 minutes. Season with salt and pepper to taste.

    Garnish the shrimp tortellini with Parmesan cheese, red pepper flakes, and basil. Serve with lemon wedges alongside for squeezing over the top.

    Store leftover tortellini in an airtight container in the refrigerator for up to 5 days.
