Shrimp bruschetta is a variation of a classic Italian finger food consisting of toasted bread crostini topped with fresh tomato salad and pieces of sautéed shrimp. In Italy, bruschetta refers to grilled bread crostini for the dish’s handheld base, but in other parts of the world, it refers to the tomato topping for the bread. Home cooks can prepare this seafood-based dish in 30 minutes for a sophisticated weeknight appetizer or easy party snack.

Follow these tips to make a flavorful batch of shrimp bruschetta:
- 1. Use day-old bread. Bruschetta is a great way to use up leftover stale bread. Choose a type of bread with an open crumb, like French bread. The holes in the bread will catch on the topping, creating textural variation.
- 2. Experiment with additions. Customize your shrimp bruschetta with additional veggies, spices, and herbs. Incorporate shallots, avocado, cucumbers, feta cheese, and fresh herbs (like dill and flat-leaf parsley) for some Mediterranean-inspired flare. Add seasonings like smoked paprika, cumin, or red pepper flakes for some heat.
- 3. Let the bruschetta come to room temperature. If you have time, pull the tomato salad for the bruschetta out of the refrigerator about one hour before serving. The sweetness of the tomato is most pronounced at room temperature.

Preheat the oven to 400 degrees Fahrenheit.

Drizzle the pieces of sliced bread with 2 tablespoons of olive oil on both sides. Line the bread slices up on a baking sheet.

Toast the baguette slices in the preheated oven until golden brown and slightly crispy, about 5 minutes per side. Remove the bread from the oven, and set it aside to cool.

While the bread is toasting, heat the oil. To a large skillet over medium-high heat, add 2 tablespoons of olive oil.

Add the minced garlic to the oil and cook until fragrant, 1 minute.

Add the shrimp to the hot pan and cook until each piece is opaque and golden brown on the surface, about 2–3 minutes per side.

Remove the pan from the heat, and season the shrimp with salt, pepper, and lemon juice.

In a large mixing bowl, combine the diced tomatoes, red onion, and basil with the remaining tablespoon of olive oil and salt and pepper to taste.
