Sausage stew is a comfort food dish of sausage, veggies, and legumes cooked together in a flavorful broth. Sausage stew is the perfect dish for a cold winter night—especially when served with a big piece of crusty bread.
7 Types of Sausage Stew
There are many different ways to incorporate sausage into stew. Here are some regional favorites:
- 1. Italian sausage stew: This popular Tuscan stew features white beans cooked with Italian sausage and vegetables, like kale. Sausages pair exceptionally well with bean stew.
- 2. French lentil stew: This hearty stew consists of French green lentils and flavorful smoked meat, such as kielbasa sausage.
- 3. Gumbo: This thick, flavorful stew from southern Louisiana is often made with smoked sausage, such as Andouille sausage, and seafood.
- 4. Budae jjigae: The Korean dish, which translates to "army base stew," was first made with surplus ingredients from United States army bases after the Korean War, such as ham, sausages, spam, and baked beans, along with Korean staples like kimchi and gochujang.
- 5. Dublin coddle: This one-pot sausage-and-vegetable stew from Ireland has potatoes, onions, sausage, and bacon.
- 6. Cocido: This Spanish stew features chickpeas and an array of meats, typically blood sausage and/or chorizo.
- 7. Kapuśniak: This Polish kielbasa stew features fresh cabbage or sauerkraut and potatoes, with flavorings of paprika and dill.

In a large dutch oven over medium-high heat, warm olive oil until just simmering.

Add the sausage and sauté until brown, crispy, and cooked through, about 8 minutes.

Transfer to a plate.

Add the tomato paste and oregano to the dutch oven and cook, stirring occasionally with a wooden spoon, until the tomato paste has taken on color, about 5 minutes.

Add the carrot, bell pepper, onion, and garlic, and sauté until slightly softened, about 6 minutes.

Add the chicken broth, bay leaf, and beans and stir to combine; add water if needed to completely submerge the beans.

Bring to a simmer over medium heat, then reduce heat as needed to maintain a simmer.

Simmer the stew, uncovered, until beans are tender, about 2 hours. Add water if needed to keep the beans submerged.

Return the sausage to the dutch oven and simmer for about 10 minutes to allow the flavors to meld.

Season to taste with salt and pepper.

To serve, ladle stew into bowls, drizzle with olive oil, and top with parmesan.
