Salted caramel brownies are a riff on traditional fudge brownies brought together with a rich, salted caramel sauce and peppered with semi-sweet chocolate chips. Making this chocolatey treat involves adding a sweet-and-savory salted caramel sauce between the layers of fudgy brownie batter before baking the dish in a hot oven.
Serve these gooey brownies as-is, or top them with homemade whipped cream and vanilla ice cream to make a caramel brownie sundae.

- 1. Watch the caramel as it cooks. Monitor your homemade caramel sauce as it cooks to ensure that the sugar doesn’t burn. Remove it from the stovetop immediately when it reaches a deep amber color. Use store-bought caramel sauce if you don’t have time to make your own.
- 2. Bake the brownies mindfully. To avoid overbaking your brownies—which will yield a dry, crumbly product—keep them in the oven until the batter is just set. Even if the center appears undercooked, your brownies are done when the edges pull away from the sides. Stick a toothpick in a spot along the edge of the brownies to check the doneness. If it comes out mostly clean, the brownies are ready.

Make the salted caramel sauce:

In a medium saucepan over medium-high heat, melt the sugar, occasionally stirring, until a smooth, deep golden-brown syrup forms, about 5 minutes.

Remove the pan from the heat and stir in the butter until it is melted and mostly incorporated, about 1–2 minutes.

Add the heavy cream and sea salt to the caramel mixture, and stir until the sauce is well combined.

Return the pan to the heat and, frequently stirring, cook the caramel until it is thick and amber brown, about 2–3 minutes.

Remove the pan from the heat, and set the caramel aside to cool for 30 minutes.
Make the brownie batter:

Preheat the oven to 350 degrees Fahrenheit. Grease an 8x8-inch pan with cooking spray and line it with parchment paper.
