What Is Saffron Rice?
Saffron rice is a side dish made from long grain rice (like jasmine rice, joha rice, or basmati rice), saffron, and often, a vegetable broth or stock made from bouillon. Like coconut rice (white rice simmered in coconut milk), the main method of cooking saffron rice is boiling it on the stovetop rather than steaming. Saffron is an expensive spice, so cooks on a budget may incorporate ground turmeric into the recipe to enhance the golden yellow rice.
In Pakistan and across the Indian subcontinent, saffron rice recipes feature clarified butter (ghee), bay leaves, and vegetable bouillon. Spanish saffron rice may incorporate diced bell peppers, garlic, and olive oil. You can make Persian saffron rice as part of a tahdig, a crispy dish of “scorched rice” that’s inverted onto a serving platter. Iranian and Turkish saffron rice, known as zerde, is closer to a sweet pudding, with a dash of sugar, rose water, and chopped nuts.
What Does Saffron Taste Like?
Saffron rice has a floral and earthy aroma, much like the crocus flower from which it derives. Depending on the amount of saffron the dish contains, the spice’s signature sharp, sweet musk can be prominent or barely detectable.
The flavor of the rice dish largely depends on its contents: Vegetable bouillon or ghee usually lends a mildly savory and salty character to the dish.

Serve saffron rice as a side dish or as part of a larger presentation or main course. Here are some other ways to serve the rice dish:
- 1. In a rice pilaf: Pulao is a staple dish at Indian festivals and special occasions, scented with various whole spices and garnished with nuts and dried fruits. Saffron pulao is a common variation. You can use saffron-infused milk to decorate traditional biryani.
- 2. As a substitute for plain steamed white rice: Saffron rice lacks some of the stickiness of steamed rice, but it makes for a dynamic complement to many main courses. In Thailand, saffron rice is popular alongside roasted chicken. Pair it with roasted vegetables, a fried egg, or serve it as part of a mezze spread.
- 3. With braises and stews: Ladle brothy, hearty braises over a serving of saffron rice for a more complete (and gluten-free) meal.

Heat the oil or ghee in a medium saucepan or heavy-bottomed pot (like a Dutch oven) over high heat. When the pan is hot, add the cumin seeds and bay leaf, and fry until the seeds begin to sizzle. Add the rice, and stir gently to coat. Toast the rice for 1 more minute.

Add the stock to the pan, and bring it to a boil. Lower the heat to a simmer, add the saffron and salt and stir to combine. Cover and cook for 12 minutes, until the rice absorbs most of the liquid. Remove the pan from the heat and let the rice stand for 5 more minutes.

Fluff the rice with a rice paddle or fork, taste, and adjust for seasoning. Sprinkle with chopped cilantro to serve.
