Roasted potatoes are a gluten-free potato side dish; the root vegetable is crispy on the outside, soft on the inside, and flavored with various seasonings. Chefs roast potatoes in an oven or air fryer at a high temperature to achieve a crisp exterior.
Multiple types of potatoes will work for a roasted potato recipe, including Yukon Golds, fingerling potatoes, russet potatoes, red potatoes, sweet potatoes, and baby potatoes. Cut the potatoes into cubes or potato wedges.
How to Add Flavor to Roasted Potatoes
Serve seasoned roasted potatoes as a side dish to a main course. Try flavoring your spuds using one or more of these methods:
- Make a dipping sauce. Start with a base of sour cream, mayonnaise, or Greek yogurt for a roasted potato dipping sauce. Add roasted garlic, lemon zest, fresh parsley, salt, and pepper. Many different seasoning combinations work in a dipping sauce—pick herbs and spices that complement the overall flavor theme of the main dish.
- Mimic the flavors of a baked potato. Toss the potatoes in garlic powder, onion powder, and smoked paprika before roasting them in the oven on a baking sheet. Then top the oven-roasted potatoes with fresh chives, cheese, and sour cream. Baked potato flavors pair well with main courses like grilled steak or barbecue chicken.
- Toss the potatoes with olive oil and fresh herbs. Let the mild flavor of the potatoes shine by using a simple seasoning of extra-virgin olive oil, salt, and fresh herbs. Toss parboiled potatoes in rosemary, thyme, oregano, or tarragon. Add Parmesan cheese to the potatoes halfway through the roasting process for a salty, cheesy element to your dish.

Wash the potatoes thoroughly.

Preheat the oven to 400 degrees Fahrenheit.

Bring a large pot of cold water to a boil on the stove over high heat.
