How to Roast Mushrooms

Home cooks prepare this easy recipe in a high-heat oven, which gives the mushrooms a crispy, caramelized exterior and tender interior. Here is an overview of how to roast mushrooms.

  1. 1. Preheat the oven. Heat an oven up to a high temperature, about 450 degrees Fahrenheit.
  2. 2. Season the mushrooms. For flavor, toss the mushrooms in olive oil and season them with salt, pepper, herbs, and the spices of your choice before roasting them. (Fresh herbs like oregano, chives, parsley, basil, or fresh thyme perfectly complement the meaty texture of roasted mushrooms.)
  3. 3. Roast the mushrooms. Transfer the seasoned mushrooms to a parchment paper–lined baking sheet and roast them in the heated oven until they are golden on the outside.

Foods to Serve With Roasted Mushrooms

Prepare roasted mushrooms as a low-calorie, keto-friendly side dish for grilled steak, roast chicken, fish, or shrimp. You can also use them as a creamy base for a roasted mushroom soup. Here are some other ways to incorporate roasted mushrooms into your meals.

  • Pastas and rice dishes: Add roasted mushrooms to vegetarian pasta and rice dishes for some meaty variation. Dishes like fettuccine alfredo and mushroom risotto pair well with savory roasted mushrooms. Alternatively, spoon roasted mushrooms over mashed potatoes or Chef Gordon Ramsay’s recipe for pomme purée.
  • Salads and grain bowls: Roasted mushrooms are a great garnish: Top a salad or grain bowl with the savory mushrooms for a boost of protein and umami flavor.
  • Veggie medley: Home cooks can serve a variety of roasted mushrooms (from baby bella to shiitake) with different vegetables. Pair roasted mushrooms with other hearty roasted vegetables, like eggplant, brussels sprouts, peppers, green beans, and squash.
