What Is Red Cabbage Slaw?
Red cabbage slaw, or cabbage salad, is a mix of shredded red cabbage (or purple cabbage), carrots, seasonings, and dressing. Red cabbage is a gluten-free, low-carbohydrate food and a source of calcium, potassium, vitamin A, and vitamin C.
A traditional coleslaw recipe includes green cabbage, savoy cabbage, and carrots in a thin dressing. Creamed cabbage, a similar dish, consists of fine-chopped cabbage in a creamy sauce. Depending on your personal preferences, a red cabbage slaw might use a mayonnaise-based dressing (for a creamy red cabbage slaw) or a vinegar dressing (for a tangy slaw).

With a chef’s knife, cut the cabbage into quarters and remove the core.

In a food processor fitted with the shredding attachment or a box grater, shred the cabbage and carrots.

In a large bowl, combine the shredded cabbage and shredded carrots.

With a chef’s knife or a mandoline, thinly slice half of a large red onion and add the slices to the cabbage and carrots.

Chop the fresh parsley and add it to the large bowl.

Slice the green onions and add them to the cabbage mixture.

Sprinkle the salt and lemon juice over the cabbage mixture and toss the ingredients.

In a small mixing bowl, combine the mayonnaise, apple cider vinegar, Dijon mustard, and black pepper.
