What Is Pumpkin Stew?
Pumpkin stew is a combination of pumpkin and vegetables cooked in broth. You can make a pumpkin stew with beef, pork, or chorizo, or a vegetarian stew with chickpeas or quinoa. Pumpkin is high in vitamin A and C, making pumpkin stew a nutritious comfort food. You can also make stew with other winter squashes, such as butternut squash, acorn squash, or delicata squash.

In a large Dutch oven over medium-high heat, heat the olive oil until just shimmering.

Add the onion, carrots, and bell pepper and sauté until the onion is translucent and the veggies are tender, about 8 minutes.

Add the garlic, salt, pepper, cumin, and coriander, and stir to combine.

Sauté until garlic is fragrant, about 1 minute.

Add the vegetable broth, bay leaves, and pumpkin.

Cover and bring to a simmer.

Continue simmering until the pumpkin is tender, about 20 minutes.
