Peel the pumpkin, remove the pumpkin seeds, and cut the pumpkin flesh into 1-inch cubes. Set aside.

In a Dutch oven over medium heat, warm olive oil until shimmering. Add pumpkin, onion, garlic, thyme, salt, pepper, and cayenne pepper and sauté until onion is translucent, about 10 minutes.

Add chicken stock and bring to a boil. Reduce to a simmer and continue to cook over low heat until pumpkin is fork-tender, about 20 minutes.

Using a food processor or immersion blender, puree the soup until smooth. Taste pumpkin puree and adjust seasoning. For a more liquid soup, add additional chicken stock.
