What Are Pumpkin Bars?
Pumpkin bars are an autumnal dessert consisting of pumpkin purée and pumpkin pie spices. To make pumpkin bars, bake the pumpkin cake in a baking pan, then top it with cream cheese frosting. Cut the cake into two-inch-by-four-inch squares to serve it. One of the most popular pumpkin recipes, pumpkin bars are a perfect fall dessert for Halloween or Thanksgiving.
6 Toppings for Pumpkin Bars
Bakers can customize the toppings for pumpkin bars. Consider the following options:
- 1. Cream cheese frosting: The classic topping for pumpkin bars is cream cheese frosting. The simplest way to make cream cheese frosting is to combine cream cheese with butter and confectioners’ sugar.
- 2. Chocolate frosting: To make a fall version of brownies, top the pumpkin bars with homemade chocolate whipped cream frosting and chocolate chips.
- 3. Maple frosting: Maple pairs well with pumpkin pie spices. Add maple syrup to a glaze, cream cheese, or buttercream frosting recipe.
- 4. Pecans: Top the pumpkin bars with ground pecans for extra flavor and texture. You can also sprinkle ground nutmeg, cloves, ginger, and cinnamon on the bars.
- 5. Sprinkles: Add orange, brown, or red sugar sprinkles over the tops of the pumpkin bars for a fall presentation.
- 6. Streusel: Finish the pumpkin bars with a crunchy streusel topping consisting of rolled oats and brown sugar.

Cream Cheese Frosting:
- 1
Preheat your oven to 350 degrees.
- 2
Grease a square pan or rectangular jelly roll pan with a teaspoon of vegetable oil or nonstick spray.
- 3
Melt your butter in a microwave-safe bowl.
- 4
Combine the dry ingredients. In a large bowl, whisk the brown sugar, granulated sugar, spices, salt, baking soda, baking powder, and flour.
- 5
Create a pumpkin mixture with the pumpkin purée, eggs, and vanilla extract. Add the melted butter and then the dry ingredients. Gently whisk the dry and wet ingredients with a fork or blender on a low setting.
- 6
Spread the mixture into the prepared pan with an offset spatula. Bake the cake in the preheated oven for 25 minutes.
- 7
Let the pan cool on a wire rack.
- 8
Prepare the frosting ingredients. Add the cream cheese, butter, powdered sugar, and vanilla extract to a large mixing bowl. Blend on low speed for 30 seconds, then increase the speed to medium to whip the mixture for 2 minutes.
- 9
Spread the cream cheese frosting on top of the bars, then cut them into 24 squares.
- 10
Wrap the bars in foil and keep them in your fridge for five to seven days. You can place toothpicks in your bars so the frosting does not stick to your foil or plastic wrap.
