Make the dry rub. In a small bowl, mix together the garlic powder, onion powder, salt, pepper, paprika, and brown sugar.

Sprinkle the rub on both sides of the pork and rub it in with clean hands to help the pork absorb the seasoning.

Let the dry-rubbed pork sit in the refrigerator while you make the BBQ sauce.

In a medium saucepan over medium-high heat, add the olive oil. Then add in the diced onion and cook until fragrant and translucent, about 3 minutes.

Add in the minced garlic and cook for 2 more minutes. If the garlic starts to become brown, turn the stove down to medium heat.

Add the ketchup and tomato paste to the onions and garlic, stirring to combine. Then, add the apple cider vinegar, brown sugar, Worcestershire sauce, and the optional cayenne pepper.

Bring the BBQ sauce to a boil over high heat, then reduce the heat to low or medium-low, and let the mixture simmer for about 10 minutes.

After 10 minutes, remove the sauce from the heat, and pour half of the sauce into a heat-proof bowl. Save the other half for basting the pork on the grill.

Remove the pork chops from the refrigerator and blot them dry with paper towels, removing as little of the dry rub as possible.

Preheat the grill, lighting half of the burners to medium-high (preferably two burners next to each other). Close the lid until the temperature dial reaches between 350 degrees Fahrenheit and 400 degrees Fahrenheit.

Bring the pork chops, half of the BBQ sauce, a basting brush, and a clean plate out to the grill.

Place the pork chops on the grill grates directly over a flame to sear the outside and form a crust. Brush the exposed side of each pork chop with BBQ sauce, and cook the pork with the lid closed for about 3 minutes.

After 3 minutes, flip the pork chops and brush the other side with BBQ sauce. Close the grill lid and cook for another 3 minutes.

Check the temperature of the pork. If it is already at 145 degrees Fahrenheit, remove the pork chops from the grill and place them on the clean plate. If the pork still needs to cook, continue to flip the chops, brushing with BBQ sauce in between each flip until the internal temperature reads 145 degrees Fahrenheit.
