Pork belly tacos are an indulgent version of the classic handheld Mexican dish featuring slow-roasted pork belly folded inside of a warm flour or corn tortilla and garnished with traditional taco toppings. Pork belly is a prime cut from a domestic pig’s underside—which contains the fattiest meat—making for a versatile, flavorful, and tender protein. A light, tangy cabbage slaw can elevate this traditional street food to new culinary heights.

Home cooks of all levels will be able to successfully craft a delicious pork belly taco by following these simple tips:

  1. 1. Dry the pork out overnight. Using a drier piece of pork belly gives you a head start on the roasting process. If you plan to roast or sear your meat, leave it uncovered in the refrigerator overnight for crispy pork belly skin.
  2. 2. Partially wrap the pork belly. Braising or searing pork belly won’t require you to lock in moisture, but it can be important when roasting or smoking. To prevent the meat from drying out during its long cooking time, create a partial moisture barrier with a few sheets of aluminum foil. As the heat sears on the top layer of fat and skin, the meat will soak up the juices and remain tender.
  3. 3. Make a fusion taco. Season your pork belly with an Asian-inspired marinade made of soy sauce, sesame oil, and sriracha for a flavorful fusion taco. Top the pork with a flavorful Asian-inspired slaw, scallions, and toasted sesame seeds.
  4. 4. Experiment with toppings. Customize your pork belly tacos with various toppings, such as roasted and raw vegetables like peppers, onions, shredded lettuce, or pico de gallo. Pile on pickled jalapeño peppers, Mexican crema, guacamole, cotija cheese, or tomatillo salsa for some added flavor.

    Prepare the pork belly. Preheat the oven to 325 degrees Fahrenheit and place a wire rack on a baking sheet. Cover the wire rack with a large piece of aluminum foil.

    In a small bowl, whisk together 1 teaspoon of salt, garlic powder, onion powder, paprika, chili powder, and a ½ teaspoon of black pepper.

    Using paper towels, blot the surface of the pork belly to remove any excess moisture.

    With the skin-side down, drizzle the olive oil over the pork belly.

    Sprinkle the spice blend over the pork, using your fingers to massage the seasoning into the meat.

    Place the pork belly skin-side up on the aluminum foil–covered wire rack.

    Lightly drizzle the pork skin with olive oil and season it with salt.

    Fold some of the aluminum foil up along the sides of the meat, leaving the skin exposed.

    Transfer the baking sheet to the oven and roast the pork belly for 2 hours.

    Remove the baking sheet from the oven and increase the oven temperature to 450 degrees Fahrenheit.

    Carefully lift the pork-filled aluminum foil off the baking sheet. Place the pork belly directly onto the wire rack over the baking sheet, without the foil. Transfer the rendered fat collected inside the aluminum foil to a heat-safe container for future use.

    Return the pork to the oven and roast (rotating as needed) until the skin is evenly golden brown and blistered, for an additional 25–30 minutes.

    While the pork belly roasts, make the cabbage slaw. In a large bowl, combine the shredded cabbage, shredded carrots, red onion, chopped parsley, and green onions.

    Sprinkle the lemon juice and 1 teaspoon of salt over the cabbage mixture and toss the ingredients to combine.

    In a small mixing bowl, combine the mayonnaise, apple cider vinegar, Dijon mustard, and a ½ teaspoon of black pepper.

    Pour the dressing over the cabbage and toss the slaw with tongs.

    Cover the bowl tightly with plastic wrap or aluminum foil and let it sit in the refrigerator for at least 1 hour.

    Remove the pork belly from the oven and allow it to rest for 10 minutes. Using a sharp knife, slice it into bite-sized pieces and transfer it to a serving bowl.
