- 1. Don’t forget the starch. Adding a thickener like cornstarch or baking powder to your plum filling will help to absorb some of the juices of the baked fruit, preventing overflows and soggy crusts in the process.
- 2. Leave space between your crust. Leave space between pieces of cobbler topping as you scatter it over the top of your plum filling. This will provide some ventilation for your fruit base as your cobbler bakes, which will help prevent your cobbler topping from getting soggy.

Combine the sliced plums, sugars, lemon juice, and cornstarch in a medium bowl. Stir the ingredients to incorporate. This will be the plum filling for your cobbler.

In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt. Add the cubed butter to the flour mixture, working it in with your hands until it has reached the texture of coarse bread crumbs.
