What Is Pistachio-Crusted Salmon?

Pistachio-crusted salmon is a baked seafood dish consisting of oven-roasted salmon fillets coated in a sweet-and-savory glaze and topped with chopped pistachios. Salmon is a healthy source of protein and fat, making it a popular choice for healthy weeknight dinners. With the addition of a maple-Dijon glaze and a pistachio crust, this tender baked salmon contains savory, tangy, sweet, and nutty flavors.

3 Tips for Making a Pistachio-Crusted Salmon

Follow these simple tips to craft the best pistachio-crusted salmon possible:

  1. 1. Use fresh, high-quality salmon. Use fresh, wild-caught salmon from a local fishmonger or seafood counter for the best-tasting dish. Wild-caught salmon is more flavorful than farmed salmon, with a firmer, flakier texture that roasts up nicely.
  2. 2. Experiment with ingredients. Customize this simple recipe with your favorite ingredients. Adjust the salmon glaze with additional condiments, oils, spices, and herbs. Swap the pistachios for crushed walnuts, pecans, hazelnuts, or almonds. Spritz the dish with fresh lemon juice or lemon zest for fruity, acidic notes.
  3. 3. Store properly. Leftover pistachio-crusted salmon will keep well in an airtight container in the refrigerator for up to 3 days. Reheat the salmon in an air fryer or microwave when you’re ready to enjoy it.

  1. 1

Preheat the oven to 375 degrees Fahrenheit and line a small baking sheet with parchment paper.

  2. 2

Using a paper towel, pat down the salmon fillets to remove any excess moisture.

  3. 3

In a small bowl, whisk together the olive oil, Dijon mustard, maple syrup, salt, and pepper.

  4. 4

Brush the sauce onto the top, bottom, and sides of each salmon fillet.

  5. 5

Add the chopped pistachios to a shallow bowl.

  6. 6

Place a fillet top-side down into the crushed pistachios and press gently to adhere the nuts to the fish. Use your fingers to press the nuts into the sides and top of the salmon fillet. Repeat this process with the remaining fillet.

  7. 7

Place the pistachio-crusted salmon fillets onto the parchment-lined baking sheet and roast until flaky and golden, about 15–20 minutes.

  8. 8

Remove the sheet pan from the oven and let the salmon rest for 5 minutes before serving.
