What Is a Pineapple Mojito?
A Pineapple Mojito is a fruity variation on a Mojito, the classic cocktail from Cuba. A classic Mojito cocktail recipe calls for light rum or dark rum, lime juice, mint, soda water, and simple syrup. A Pineapple Mojito also adds fresh pineapple juice.

Consider the following recipe adaptations and tips when making a Pineapple Mojito:
- 1. Use light rum. To make a Pineapple Mojito, use light rum, which is sweeter and pairs better with pineapple than dark rum.
- 2. Go for fresh pineapple. You can use canned pineapple juice to make a Pineapple Mojito, but fresh, in-season pineapple will give the mojito a fresher taste. Unlike pineapple juice, fresh pineapple contains no added sugar. To make fresh pineapple juice, pulverize fresh pineapple slices in a blender. You can strain the pineapple juice with a strainer, or add the pineapple puree to the Mojito if you want pineapple chunks in your cocktail. You can top off your fresh Pineapple Mojito with a pineapple wedge as a garnish.
- 3. Add sugar. You can add simple syrup, an even mix of water and sugar, to the cocktail for more sweetness.
- 4. Make it a mocktail. If you want to create a non-alcoholic Pineapple Mojito, just omit the rum and add more soda water.

Separate the mint leaves from their stems, leaving the tops intact. Discard the stems and set the tops aside.

Drop the mint leaves and simple syrup into a tall glass. Using a muddler or the back of a wooden spoon, muddle the ingredients to release their flavor.

Add the pineapple juice, lime juice, and white rum. Stir lightly to combine the ingredients.

Add ice cubes or crushed ice until the glass is about halfway full.

Using a bar spoon, pull some of the mint up from the bottom of the glass while swizzling the liquid and ice. Alternatively, you can use a cocktail shaker, but be careful not to agitate the mix too vigorously.

Top off the glass with soda water.

Make a mint bouquet: Collect the mint tops from step one and place them tightly in your palm. Lightly brush them with your opposite hand until they are upright and uniform. For extra aromatic effect, slap the mint bouquet against the back end of your opposite hand. Insert the bouquet in the ice next to the straw.
