What Is a Peach Cobbler?
A peach cobbler is a freeform dessert with a peach base and buttery biscuit topping. The name cobbler comes from the shape of the batter or biscuit dough dropped in dollops on the fruit, which puff up to look like cobblestone streets. The old-fashioned name matches the old-fashioned fruit dessert, which dates back to the nineteenth century. Peach cobbler is not to be confused with peach crisp, which is a similar fruit dessert recipe featuring a streusel, rather than biscuit, topping.
3 Tips for Making Peach Cobbler
Making a peach cobbler is similar to making other cobblers, like blueberry cobbler, rhubarb cobbler, huckleberry cobbler, or blackberry cobbler. Follow these tips to ease the baking process:
- 1. Use frozen or fresh fruit. Fresh peach cobbler may be a classic summer dessert, but you can make an absolutely delicious year-round version outside of peach season by substituting an equal amount of frozen sliced peaches—no need to thaw. (Skip the canned peaches, however, since they are pre-cooked and sweetened.) If using fresh peaches, remove the pit and slice the fruit. Whether or not you remove the skin is up to you.
- 2. Adjust the sugar. Peaches range in sweetness, so it's important to taste them before adding the sugar. For ripe peaches that already taste sweet, use less sugar—as little as ¼ cup. For peaches that taste very tart, use more sugar—as much as ¾ cup.
- 3. Mix and match. If you have a variety of different types of fruit, mix them all together in a cobbler. Peaches pair especially well with tart berries like blackberries, raspberries, and blueberries, or with other stone fruits like plums.

Preheat the oven to 380 degrees Fahrenheit.

Combine the peaches, sugar, lemon zest, lemon juice, cinnamon, and cornstarch in a medium bowl.

Stir to incorporate, and set the fruit mixture aside.

In a large bowl, combine the dry ingredients.

Whisk together the flour, cornmeal, sugar, baking powder, and salt.

Add the cubed butter, and work it into the flour mixture with your hands until it resembles coarse bread crumbs.

Whisk a ½ cup of buttermilk, egg, and vanilla together in a glass measuring cup or small bowl; add it to the flour and butter mixture and stir together with your hands or a rubber spatula, just until combined.

Transfer the peach filling to a large baking dish.

Use your hands to tear off a ½ cup of pieces of cobbler topping, and place it over the surface.

Brush the dough with the remaining tablespoons of buttermilk, and then sprinkle with Demerara sugar.
