What Are Peach Cobbler Muffins?

Peach cobbler muffins bring together a batter laced with fresh, juicy peaches and a crumbly streusel topping to create a baked treat that resembles peach cobbler. You can prep, bake, and serve these simple muffins in under an hour. Serve these muffins for breakfast, brunch, or warmed up and with a scoop of vanilla ice cream for a tasty individually-sized dessert.

4 Tips for Making Peach Cobbler Muffins

These delicious muffins are good to throw together in a pinch, but there are a few tricks to follow to set yourself up for success.

  1. 1. Use fresh fruit, when available. Using fresh, ripe peaches that are in season is a surefire way to get the best peach flavor possible in your baked goods. If fresh peaches aren’t available, you can use canned peaches in fruit juice. Make sure to drain them thoroughly of any added liquid before adding the fruit to the batter.
  2. 2. Add your favorite spices and nuts. While cinnamon and peach are a great pairing, feel free to play around with other warm, fall-friendly spices like nutmeg, mace, and allspice. You can also add nuts like pecans, walnuts, or slivered almonds to your muffin filling or streusel topping for textural contrast.
  3. 3. Don’t ditch the vegetable oil. Using butter as the only fat source for your batter will likely result in a more dense, cupcake-like final product. Incorporate vegetable oil into the batter for a soft, airy muffin texture.
  4. 4. Avoid over-leavening and over-mixing. Although it might be tempting to add some extra leavening agent to create a fluffier muffin, adding too much will yield a dense, chewy dough. Overmixing the batter can also potentially over-develop the gluten in the dough and result in dense muffins. Instead, mix the batter until the ingredients are just combined.

For the batter:

  1. 1

Preheat the oven to 350 degrees Fahrenheit. Spray a large muffin tin with non-stick cooking spray, or line each tin with paper liners.

  2. 2

Make the streusel topping. In a small bowl, whisk together the flour, brown sugar, cinnamon, and baking powder. Add the butter into the dry ingredients and mix everything together with your hands until the mixture reaches the texture of coarse breadcrumbs. Set the topping aside.

  3. 3

In a medium mixing bowl, whisk together the flour, baking powder, salt, and ground cinnamon.

  4. 4

Using a stand mixer or your hands in a large bowl, beat together the butter and sugar until well combined and fluffy, about 1–2 minutes.

  5. 5

Add the milk, egg, vegetable oil, and vanilla extract to the butter mixture and stir to incorporate.

  6. 6

Add the flour mixture to the wet ingredients and stir until just combined, being careful not to overmix the batter. Gently fold the diced peaches into the batter.

  7. 7

Evenly distribute the muffin batter into the muffin cups, filling each cup to be about ⅔ full.

  8. 8

Spoon a heaping spoonful of streusel topping over the top of each muffin.

  9. 9

Bake the muffins for 20–25 minutes or until the topping is golden brown and you can stick a toothpick through the center of a muffin and it comes out clean.

  10. 10

Remove the pan from the oven, and allow the muffins to rest for 5 minutes in the muffin pan before transferring them to a wire rack to cool completely.
