A Passion Fruit Mojito is a tropical and tart variation on a Mojito, the classic Cuban rum cocktail. A traditional Mojito cocktail contains light rum or dark rum, lime juice, mint, simple syrup, and soda water to make it fizzy. A Passion Fruit Mojito adds fresh passion fruit or passion fruit juice. Passion fruit seeds are edible, so you can safely put them in the glass to make a visually interesting, tasty, and refreshing summer cocktail.

- 1. Use light rum. Traditional Mojito recipes call for light rum or dark rum. For Passion Fruit Mojitos, use light rum to enhance the flavor of the fruit.
- 2. Fresh passion fruit or juice. Passion Fruit Mojito recipes usually call for fresh passion fruit, but you can also use passion fruit juice. Passion fruit juice is sweetened, so you might want to decrease the amount of simple syrup whening making a cocktail.

Separate the mint leaves from their stems, leaving the tops intact. Discard the stems and set the tops aside.

Drop the mint leaves and simple syrup into a tall glass or a highball glass.

Using a muddler or the back of a wooden spoon, muddle the ingredients to release their flavor.

Cut the passion fruits in half and scrap the pulp into the glass. Run the passion fruit through a strainer to remove the seeds, scraping the pulp and juice into the glass. You may want to add more passion fruit if there’s not enough passion fruit flavor.

Add the lime juice and white rum to the mixture. Stir lightly to combine the ingredients.

Add ice cubes or crushed ice until the glass is about halfway full.

Using a bar spoon, pull some of the mint and passion fruit pulp up from the bottom of the glass while swizzling the liquid and ice. Don’t agitate the mix too vigorously.
