What Is Olive Bruschetta?
Olive bruschetta is an appetizer that consists of crostini (toasted or grilled bread with olive oil) topped with olive tapenade. Bruschetta is an Italian antipasto (appetizer) that was originally created to salvage stale bread and showcase the flavors of olive oil. In Italy, the term “bruschetta” refers to the grilled slice of bread rubbed with garlic and olive oil, not the topping itself. Tomato and basil are a common bruschetta topping, as well as beans and cured meats. For variety, try making a homemade olive tapenade with whipped goat cheese and balsamic vinegar.
3 Tips for Making Olive Bruschetta
Follow these tips to change up or simplify your olive bruschetta:
- 1. Experiment with olive varieties. You can use standard black and green olives for the tapenade, or experiment with your favorite varieties. Kalamata olives add a rich, intensely fruity flavor to your bruschetta, while Castelvetrano olives have a mild, buttery flavor.
- 2. Add veggies. Add chopped marinated artichoke hearts, red onions, or even diced zucchini to the olive mixture for more textural variety and nutritional value.
- 3. Use store-bought dip. Instead of making the olive mixture from scratch, you can save time by using store-bought dip and finish it with ribbons of fresh basil.

Preheat the oven to 400 degrees Fahrenheit with the rack in the bottom position. Set baguette slices on a baking sheet and drizzle with olive oil on both sides. Add half the minced garlic to the top sides of the bread. Transfer bread to the oven and toast until crispy and golden brown on the outside, but still slightly pliable, flipping halfway through, about 5–7 minutes total. Remove and season lightly with salt.

In the bowl of a food processor, blend goat cheese, cream cheese, Parmesan, and remaining minced garlic until fluffy and smooth. Season to taste with salt and pepper.

In a medium bowl, stir together grape tomatoes, sun-dried tomatoes, olives, capers, thyme, and olive oil. Season with salt and pepper to taste.

Spread goat cheese mixture evenly over crostini slices, then top with olive mixture. Garnish with basil ribbons. Drizzle with balsamic vinegar and finish with a few cracks of black pepper.
