Okra chips are a crispy, oven-baked preparation of the star-shaped, seed-filled vegetable okra. Okra is a popular vegetable in Southern cuisine. It can be prepared in a number of ways and roasts up well to make vegetable chips. To make okra chips, slow-roast the earthy green pods at a low temperature to yield a batch of crunchy, low-carb, gluten-free snacks.
4 Tips for Making Okra Chips
When you’re making okra chips for the first time, follow these simple tips to create the best side dish possible.
- 1. Use fresh okra. To make this recipe, use in-season okra from the farmer’s market or grocery store. Look for okra that is smooth and bright green with no brown spots. Larger pieces of okra will produce the best chips because the okra slices will shrink when baking. Thawed frozen okra isn’t recommended for this okra recipe.
- 2. Experiment with different seasonings. You can customize these vegetable chips to include your favorite spices and seasonings, from zesty additions like cayenne pepper, chili powder, paprika, and cajun seasoning, to classics like onion powder, garlic powder, cumin, and dried herbs.
- 3. Finish the dish with a dip or sauce. Serve these chips with a sauce or dip, like a flavorful, Cajun-inspired ranch or a classic sour cream and onion dip.
- 4. Store properly. These oven-baked chips will taste best if you eat them shortly after you bake them, but they can be stored in an airtight container for up to three days. Bring the okra chips to room temperature before storing them.

Preheat the oven to 450 degrees Fahrenheit.

Prepare the okra to be roasted by cutting off the stem and tip of each pod and slicing the pods in half lengthwise.

In a large bowl, add the olive oil, garlic powder, salt, and pepper to the sliced okra.

Using your hands or a wooden spoon, stir the okra until the vegetables are completely coated in the seasoning mix.

Transfer the okra to a parchment-lined baking sheet and spread the vegetables out in a single layer.

Place the baking sheet in the oven and roast the okra for 20 minutes, shaking the pan once halfway through the roasting time.

Remove the sheet pan from the oven and decrease the temperature to 175 degrees Fahrenheit.

When the oven temperature has reached 175 degrees, return the pan to the oven and crack the oven door slightly to vent.

Bake the okra chips until completely crisp, about 3 hours.

Remove the okra from the oven and allow the chips to cool for 10 minutes before serving them warm.
