Rinse the mushrooms under cool water, patting them dry with a paper towel. Chop the woody ends off the mushrooms and slice the mushrooms into ¼-inch pieces.

Finely chop the garlic cloves and scallions.

Drizzle olive oil over a cast-iron skillet, covering most of the pan in oil. Set the stove to medium-high heat, and sauté the mushrooms. Let the mushrooms cook until they are deep brown, about 15 minutes.

Mix in the chopped garlic, scallions, black pepper, and salt. Using a spoon, stir the mushrooms so they’re evenly covered in the seasonings. Cook until the garlic is golden brown, about 5 minutes.

Lay out a flour tortilla and add a heaping spoonful of mushrooms. Repeat with the remaining 5 tortillas.
