What Is Mushroom Gravy?

Gravy is a pan sauce made from vegetable stock or meat drippings and combined with wine, milk, or butter for a rich flavor. It’s cooked down and thickened with flour or cornstarch until it becomes glossy. Mushroom gravy is typically made with mushrooms, beef stock, and herbs. To make the gravy more flavorful, use wild mushrooms. For a mild gravy, use white button mushrooms.

How to Serve Mushroom Gravy

You can serve mushroom gravy as an accompaniment to a range of meat and vegetable dishes, such as:

  • Grilled or roasted meat: Add a few spoonfuls of mushroom gravy on top of chicken, steak, pork chops, or meatloaf. It adds creaminess and a rich flavor.
  • Mashed potatoes: For even more flavorful mashed potatoes, smother the potatoes in mushroom gravy. The gravy adds a deep, umami flavor to the dish.
  • Roasted vegetables: Increase the richness of roasted root vegetables, like carrots, parsnips, and potatoes, by serving with a side of hot gravy.

3 Variations of Easy Mushroom Gravy

It’s easy to customize gravy specifically for your taste and dietary preferences. Here are three variations of mushroom gravy:

  • Gluten-free mushroom gravy: Most store-bought gravy or mushroom sauce contains wheat flour. To make a gluten-free version, use cornstarch instead of all-purpose flour, and swap out the regular soy sauce for gluten-free soy sauce. When using cornstarch, you’ll need to make a slurry (a mixture of equal parts cornstarch and liquid) and then whisk the slurry into the gravy before bringing the whole mixture to a boil.
  • Low-sodium gravy: To reduce the sodium content in mushroom gravy, use low-sodium beef broth or vegetable broth, and use unsalted butter.
  • Vegan mushroom gravy: Substitute vegetable stock instead of beef broth or chicken broth, and use non-dairy butter or olive oil.

Ingredients

    In a large skillet or high-sided saucepan, melt 2 tablespoons of butter over medium-high heat. Add the shallot or onion and sauté for 3–4 minutes, until they are translucent. Stir occasionally to prevent sticking.

    Add the mushrooms and cook for 8–10 minutes, stirring occasionally, until the mushrooms are golden brown.

    Add the flour and stir to coat the mushrooms. If you’re using cornstarch, make a slurry and add it with the white wine.

    Using a wooden spoon or nonstick spatula, deglaze the pan with white wine, scraping the brown bits back into the sauce.

    Add in the vegetable or beef stock, soy sauce, thyme, salt, and black pepper, and stir until the gravy is smooth and the flour is completely incorporated.

    Continue cooking for about 5 minutes until the gravy reaches a gentle simmer and the mixture begins to thicken.

    Take the pan off the heat and stir in the 2 remaining tablespoons of butter. Allow the gravy to cool for 2–3 minutes. Adjust the thickness if necessary. If the gravy is too thick, add a few tablespoons of stock to thin it out. If it’s too thin, add a teaspoon of flour and bring it back to a boil to thicken.
