Matcha brownies are a twist on the classic fudgy, chocolatey dessert made with matcha powder and white chocolate. Matcha brownie recipes feature the ingredients of traditional brownies, including milk, butter, sugar, eggs, and all-purpose flour, but bakers replace the typical cocoa powder with matcha green tea powder, and white chocolate takes the place of dark chocolate chips.
Matcha is the stone-ground form of tencha, a variety of green tea leaves. Tencha refers to a group of cultivars of the Camellia sinensis plant, the same plant that produces white, oolong, and black teas.

- 1. Use ceremonial grade matcha. Ceremonial grade matcha is made from young tea leaves and will give your baked goods a bright green hue. You can also use culinary-grade matcha, which is less expensive.
- 2. Control the flavor. A little matcha goes a long way, so resist the temptation to add more. Too much matcha will give the brownies a grassy, bitter flavor.
- 3. Avoid overmixing. Introducing a lot of air into the brownie mixture creates cakey brownies instead of fudgy brownies. To avoid this, beat the eggs and sugar together just until they combine but before they become light and fluffy. This helps to produce a denser, fudgier brownie.
- 4. Make gluten-free brownies. You can also make this dessert gluten-free by simply using gluten-free flour—such as almond flour or rice flour—instead of the usual all-purpose flour.
How to Make Matcha Brownies
Follow these simple steps to make the best fudgy matcha brownies:
- 1. Mix the wet ingredients. Whisk together the melted butter, sugar, and vanilla. Melt white chocolate in the microwave, taking care not to burn or overcook, and then whisk it into the batter. Add the eggs, mixing until just barely combined.
- 2. Finish the batter. In a separate bowl, combine the flour, baking powder, baking soda, salt, and matcha powder. Stir in the flour mixture until the batter is just combined and uniformly green.
- 3. Bake the brownies. Bake the brownies until a toothpick comes out mostly clean—a few moist crumbs are okay. Take care not to overbake the brownies so they have a chewy, gooey texture.
- 4. Finish and serve. Once the brownies are cooled, dust them with powdered sugar and a little matcha powder. You can serve matcha brownies with whipped cream or vanilla ice cream, if desired.

Whisk the melted butter, brown sugar, granulated sugar, and vanilla until smooth in a large bowl.

In a small bowl, microwave the white chocolate chips, working in 20-second increments, until smooth.

Whisk the melted chocolate into the wet ingredients until smooth. Stir in the eggs until well blended.
