Lemon Blueberry Cookies Recipes: Easy, Chewy Lemon Cookies

• 1 ¾ cup all-purpose flour
• 1 teaspoon baking powder
• ½ teaspoon baking soda
• 1 teaspoon salt
• 1 cup butter, unsalted, room temperature
• ¾ cup white sugar
• ¼ cup brown sugar
• 1 large egg
• 1 large egg yolk
• 2 tablespoons lemon zest
• 1 teaspoon vanilla extract
• 1 cup blueberries (dried, fresh, or thawed)
• ½ cup white chocolate chips
• 1 cup powdered sugar
• 2 tablespoons fresh lemon juice
• 2 tablespoons whole milk

   Preheat the oven to 350 degrees Fahrenheit.

   Line 2 baking sheets with parchment paper.

   In a large bowl, combine the dry ingredients (flour, baking powder, baking soda, and salt).

   In the bowl of a stand mixer fitted with the paddle attachment, beat the unsalted butter, white granulated sugar, and brown sugar for 7 minutes.

   Incorporate the whole egg, followed by the egg yolk.

   With the mixer on medium speed, beat the butter, sugar, and egg mixture for 10 minutes until it becomes light and fluffy.

   Add the lemon zest and vanilla extract.

   With the mixer on low speed, add the flour mixture to the wet ingredients.

   With a wooden spoon or rubber spatula, gently fold in the blueberries and white chocolate chips.

    With a cookie scoop or spoon, place doughballs on the cookie sheets, leaving about an inch of space between each ball.

    Bake the cookies until the edges are golden brown, 12–15 minutes.

    Cool the cookies on a wire rack.

    In a small mixing bowl, combine the powdered sugar, lemon juice, and whole milk.

    Place a cookie sheet under the wire cooling rack.

    With a spoon, drizzle the glaze over the lemon blueberry cookies.
