What Are Lemon Blueberry Cookies?

Lemon blueberry cookies are a variation of cream cheese cookies or sugar cookies featuring lemon juice, lemon zest, blueberries, and a sweet and tangy lemon glaze. The texture of lemon blueberry cookies can be similar to a soft and chewy cookie, a muffin top, or a scone.

4 Types of Blueberries for Lemon Blueberry Cookies

When it comes to achieving a blueberry flavor in blueberry lemon cookies, you can use blueberries in a few different forms. Here are four that will impact the color and texture of the cookie in unique ways:

  1. 1. Blueberry jam: If you want to change the color of the cookie from white or pale yellow to a purplish-blue hue, use blueberry jam, which will also add sweetness to the cookies. Many blueberry jams contain whole blueberries or pieces of blueberry, which add texture as well to lemon blueberry cookies.
  2. 2. Dried blueberries: Soft and jammy dried blueberries—similar to dried cranberries or raisins—will add a chewy texture to cookies, while freeze-dried blueberries add an airy crunch. Both types of blueberries will hold their shape in cookie dough and will not affect the color of the cookies.
  3. 3. Fresh blueberries: Bursting with juice and blueberry flavor, fresh blueberries are a common addition in baked goods. Mix them gently into the cookie dough to keep them whole or mash them slightly for more evenly dispersed blueberry flavor.
  4. 4. Frozen blueberries: It’s essential to thaw frozen blueberries before adding them to cookie dough since defrosting blueberries release excess water. The additional moisture can drastically alter the texture of a cookie or other baked good. Keep in mind, frozen blueberries are more likely than fresh blueberries to turn a cookie dough blue or purple.
