What Is Lemon Blueberry Bread?

Lemon blueberry bread is a loaf cake packed with lemon flavor and fresh blueberries. Somewhere in between a quick bread and a pound cake, a lemon blueberry loaf is the perfect baked good to serve with brunch or afternoon coffee.

Ingredients

    Preheat the oven to 350 degrees Fahrenheit.

    Lightly grease a 9-inch loaf pan with a little of the melted butter.

    Line the pan with parchment paper, leaving a generous overhang on the long edges.

    In a medium bowl, whisk together the flour, baking powder, and salt.

    In a large bowl, whisk together the yogurt, sugar, eggs, lemon zest, vanilla extract, and remaining butter.

    Add the dry ingredients to the wet ingredients and stir to combine.

    Using a rubber spatula, fold the blueberries into the batter.

    Pour the batter into the prepared pan and bake until a toothpick inserted into the center of the loaf comes out clean, about 1 hour.

    Let the bread cool inside the loaf pan for 15 minutes, then use the parchment paper to remove the loaf to a wire rack to cool to room temperature.

    In a small bowl, whisk together lemon juice and powdered sugar.
