What Are Kale Chips?

Kale chips are a low-carb snack consisting of roasted kale leaves tossed in olive oil and baked at a low temperature until crispy. Kale (Brassica oleracea) is a relative of cabbage that growers harvest for its edible greens, which come in a few variations: curly, bumpy, flat, or feathery. Rich with antioxidants, vitamin A, vitamin C, protein, fiber, iron, and magnesium, snacking on seasoned kale chips is a flavorful and easy way to incorporate more leafy greens into a balanced diet.

Kale chips are an excellent gluten-free alternative to potato chips that you can easily make at home. Follow these cooking tips to make perfectly seasoned, crispy kale chips.

  1. 1. Incorporate additional seasonings. Customize any simple kale chip recipe with your favorite spices, dried herbs, and condiments. Savory seasonings like cumin, garlic powder, za’atar seasoning, curry powder, chili powder, and nutritional yeast complement the leafy green well. Add some heat to your kale chips by incorporating a dash of hot sauce or a pinch of cayenne pepper.
  2. 2. Skip the kale massage. Many kale salad recipes require you to massage the greens to soften their texture and reduce their bitterness. However, when it comes to kale chips, it’s best to start with unbruised, fresh kale, which will crisp up perfectly in the oven.
  3. 3. Store in an airtight container. Let your leftover kale chips cool fully to room temperature before storing them in an airtight container. They will keep well in a cool, dry spot for 2–3 days. To maintain the crispiness of the kale chips, add some grains of rice to the chip container to absorb excess moisture.

    Preheat the oven to 225 degrees Fahrenheit and line a large rimmed baking sheet with parchment paper.

    Using your hands, pull the leaves off of the kale stems and tear them into smaller pieces. Discard the stems.

    In a large bowl, toss the kale with olive oil, salt, and pepper until the leaves are evenly coated.

    Spread the kale pieces out in a single layer on the prepared baking sheet. Depending on the quantity of kale and the size of the pan, you may need to use 2 baking sheets.

    Transfer the sheet pan to the oven and bake the kale for 20 minutes. Using a spatula, carefully stir the kale pieces on the sheet and continue baking until they are crispy and golden, which should take an additional 7–10 minutes.

    Remove the kale chips from the oven and let them cool for a minimum of 15 minutes before serving. Allow leftover kale chips to cool fully to room temperature before storing them in an airtight container.
