What Is an Ice Cream Sandwich?
An ice cream sandwich is a frozen dessert consisting of a layer of ice cream between two baked goods, like cookies, biscuits, or wafers. Brownies, blondies, oatmeal-raisin cookies, sugar cookies, or chocolate chip cookies are all equally popular in Western-style ice cream sandwiches; elsewhere in the world, bakers may use crispy wafer cookies or bread buns.
While vanilla ice cream is the traditional filling in a classic ice cream sandwich, any flavor of ice cream is suitable. Complement the caramelized brown sugar notes of blondies with a sharp coffee ice cream, or double down on chocolate flavor by pairing brownie ice cream sandwiches with a fudgy chocolate ice cream center. Toasty, nutty peanut butter ice cream or bright and sweet strawberry ice cream and oatmeal cookies are natural matches.
4 Tips for Making Ice Cream Sandwiches
Homemade ice cream sandwiches are the star of any backyard BBQ or warm weather get-together. Here are some tips to consider before making a batch of these frozen treats:
- 1. Remove the cookies from the oven while soft. Dry, crunchy cookies or brownies will turn hard once frozen, so pull them out of the oven while their centers are still relatively soft before assembling your ice cream sandwich.
- 2. Soften the ice cream for easy spreading. Whether you’re using store-bought or freshly made ice cream, you’ll need to take extra care during the freezing process when making this dessert. For an ice cream sandwich that holds together when bitten into, use an offset spatula to spread slightly softened ice cream into an even layer, then set the assembled sandwich in the freezer before cutting and serving.
- 3. Set the sandwiches for at least 12 hours. Successful ice cream sandwiches require a delicate balance: Both the ice cream and the outer layers should be fully frozen and hold their shape but remain soft and easy to bite into, just like an ice cream cake.
- 4. Add toppings to the ice cream during assembly. To take your ice cream sandwich to the next level, top the ice cream filling with sprinkles, edible cookie dough pieces, chopped cheesecake bites, a drizzle of fudge, or candy pieces.

Line 2 baking pans or 2 rimmed baking sheets with parchment paper. Preheat the oven to 350°F.

In a large bowl, whisk together the flours, baking powder, cinnamon, and salt.

Melt the butter in a medium saucepan over medium heat, stirring and occasionally swirling until it smells nutty and rich and froths into a golden brown color, 5-7 minutes. Remove the pan from the heat, and let it cool.

In a separate bowl, or the bowl of a stand mixer fitted with the paddle attachment, combine the butter and sugars on medium speed until they’re light and fluffy. Add in the eggs one at a time, fully incorporating them before each addition. Add the vanilla flavoring, and beat until smooth.

Add the dry ingredients to the butter mixture in thirds, mixing until no dry streaks remain. Fold in the chocolate chips, if using.

Divide the batter between the prepared pans, smoothing the surface with an offset spatula or bench scraper.

Bake until the surface of the blondies is golden brown, and the center is firm but soft to the touch, about 10 minutes. (Monitor them as they bake since they will be thinner than an average pan of blondies.) Remove the pan from the oven and allow it to cool. Remove the ice cream from the freezer to soften.

Use an ice cream scoop to portion the softened ice cream into a thick layer on top of one of the blondie layers and spread to the edges using a rubber spatula or offset spatula. Gently lift the second blondie layer using the parchment paper, and invert over the ice cream, then wrap the entire sandwich in plastic wrap and aluminum foil, and return it to the freezer for 12 hours so that it can set.

When you’re ready to serve, lift the sandwich from the pan, and remove the parchment paper. Transfer it to a cutting board and use a very sharp knife to cut into squares or bars.
