7 Ways to Store Lemons
Consider the many different ways you can store lemons to help these citrus fruits last for weeks and months:
- 1. Keep lemons at room temperature. Whole lemons can last up to a week if you store them at room temperature on the countertop.
- 2. Store lemons in the refrigerator. Whole lemons can last for a month in the refrigerator if you store them in an airtight container or a sealed plastic bag in the crisper drawer.
- 3. Wrap up cut lemons. You can refrigerate lemon halves and lemon slices in the fridge for five to seven days in an airtight container or a zip-top bag. You can also wrap the lemon wedges in plastic wrap to keep them from drying out.
- 4. Juice the lemons. You can juice lemons and store the lemon juice in an airtight container or enclosed glass jar in the fridge. The lemon juice can last upwards of four days, though it will slowly lose its flavor.
- 5. Place lemons in the freezer. You can freeze whole lemons. Put the lemons in a freezer bag, and when you need them, you can defrost the lemons until they’re soft again. The pulp will be mushy, but you will still be able to use the juice. Frozen lemons will keep for three to four months.
- 6. Freeze lemon slices. Slice lemons into smaller pieces and remove the seeds. Spread the slices on a baking sheet and flash freeze until they’re solid. Transfer the lemon slices to a freezer bag and seal. Frozen lemons will keep for three to four months. You can use frozen lemons in cooking, baking, or as a garnish.
- 7. Freeze lemon juice. You can also freeze lemon juice. Juice the lemons and put the juice in individual ice cube trays. When frozen, move the juice blocks into a freezer bag. You can then use the lemon juice for any recipe that calls for fresh lemon juice, such as lemonade or marinades. Frozen lemon juice will last for three to four months.

The following food storage tips can help keep lemons fresh:
- 1. Choose the right lemons. Choose lemons that are bright yellow and not too mature. Younger lemons will last longer in storage.
- 2. Store lemons by themselves. Store lemons away from other fruits. Fruits such as apples and bananas release ethylene gas as they ripen, which can speed up the natural ripening process of lemons.
- 3. Make lemon water. If you have sliced lemons to use, make lemon water by combining the lemon slices and water and leaving it in the refrigerator.
- 4. Zest frozen lemons. It is easier to zest a frozen whole lemon than a fresh lemon. To add a zesty kick to a recipe, take a frozen lemon from the fridge and run the rind over a lemon zester tool.
