What Are Zucchini Chips?
Zucchini chips are paper-thin zucchini slices that are baked or fried until crispy. Like the beloved festival favorite, the pickle chip, thicker-cut zucchini chips can also be coated in breadcrumbs before frying. While basic zucchini chips are easy to make in the oven, you can also experiment with different cooking methods—like air frying or dehydrating—to achieve different textures.
How to Serve Zucchini Chips
Serve zucchini chips as an appetizer, alongside an assortment of dips, or as a crunchy side dish for a lunchtime sandwich spread. When seasoning, remember that salt and pepper are just a starting place: Sprinkle zucchini chips with garlic powder, Parmesan cheese, truffle salt, curry powder, smoky-sweet chipotle, or paprika to suit your mood.
How to Store Zucchini Chips
Zucchini chips will last for a few days in a tightly sealed bag or airtight container. If your zucchini chips lose their crunch, you can always re-crisp them in the oven for a few minutes.

Preheat the oven to 400°F. Line two baking sheets with parchment paper.

Using a mandolin or a very sharp chef’s knife, thinly slice zucchini into rounds about ½-inch thick. Using paper towels, gently press as much excess liquid as you can from the slices to help them crisp up properly.

Arrange zucchini in a neat, single layer on the prepared baking sheets. Using a pastry brush, coat each slice with a thin layer of oil. (Alternatively, give them a quick mist with a cooking spray.) Sprinkle lightly with salt and pepper.

Bake until crispy, about 25 minutes. Flip halfway through as needed to prevent one side from browning (or burning) more than the other.

Let chips cool for a few minutes after removing from the oven to help them unstick, then add more seasoning as needed.
