What Is Fattoush?
Fattoush is a Middle Eastern salad made with fresh vegetables (usually tomato and cucumber) and torn pita bread croutons (known as fatteh in Arabic). Although tomato and cucumber are the standbys, fattoush often includes other veggies, such as radishes, romaine lettuce, scallions, purslane, and bell peppers. Falling somewhere between Lebanese tabbouleh and Italian panzanella, fattoush features plenty of fresh herbs plus bread to soak up a bright, lemony dressing.
What to Serve With Fattoush
Fattoush is the perfect side dish for almost any Middle Eastern or Mediterranean main course. Add protein in the form of cheese or chickpeas for a refreshing lunch option. Try fattoush alongside falafel, lamb kebabs, za’atar spiced chicken, or Mediterranean grilled shrimp. You can also include it as part of a mezze (appetizer platter) with hummus, baba ganoush, and other small bites.

Preheat the oven to 400 degrees Fahrenheit.

Tear or cut pita breads into bite-sized pieces and arrange pita pieces in a single layer on a large rimmed baking sheet. Bake until golden brown and slightly crispy, about 5 minutes. Set toasted pita aside to cool.

Meanwhile, in a small bowl, macerate sliced red onion with sumac and lemon juice.

In a large bowl, combine tomatoes, cucumbers, feta (if using), and ½ teaspoon salt and toss to coat.

Once the red onions have mellowed in flavor, add them to the bowl with the tomatoes and cucumbers, reserving the lemon juice.

Make the vinaigrette. Add olive oil to lemon juice with the grated garlic clove, remaining ½ teaspoon salt, and black pepper, and whisk to emulsify. Drizzle vinaigrette over salad ingredients, and toss to coat. Top with pita chips and fresh herbs, and toss to coat again. Taste for salt and acid.
